Tea holds an essence of life. Do you know that “sweet bitterness”? In the first roast you can taste the sugar (sweetness), in the second, the catechin (astringency), and in the third, the bitterness of caffeine. In other words, there are three components – sweet, astringent, and bitter. If you ignore these, it will be “Mu-cha Ku-cha” (No Tea, Bitter Tea or a Japanese word for “Unreasonable”). That’s where that word came from. Oh wow!
